Microwave Bacon, Onion and Cheese Au Gratin

    If I can speed up a process I will:-) Only a 50 minute time saving from the conventional method, but when you're in a hurry and hungry folk are waiting every minute counts.

    Serves: 4 

    • 4 large potatoes, washed, peeled and sliced 1/4 inch(0.25cm) thick
    • 1 large onion, finely diced
    • 4 slices bacon, diced
    • 2 T margarine
    • 1 T flour
    • 1 c milk
    • 1 c cheese

    Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Peel wash and slice the potatoes.
    2. Cook the onion in 1 T of the margarine.
    3. Add the diced bacon to the onion and cook.
    4. Make a roux; 1 T of margarine and 1 T flour, cook until sizzling but not burnt.
    5. Gradually add the milk stirring to prevent lumping.
    6. Add the grated cheese and stir until melted.
    7. Layer potatoes and onion, bacon mix in a microwave proof container.
    8. Pour the cheese sauce over the layered potatoes.
    9. Cover and microwave until a skewer slides easily through the layers.


    NB: Cooking times will vary depending on your microwave wattage. Mine is an oldy 750 watt. It took 40 minutes to cook (I used very, very large potatoes) I also turn the mixture over and the half way mark to speed the process further (grumbles from the folks). I also used an 2 litre ice cream container which has a no. 5 recycle mark.
