Capsicum Fried Eggs

This simple brekkie egg dish is so easy but looks so flash. Just crack your eggs into a capsicum ring and fry until done! Serve with your favourite brekkie stuff.

Serves: 2 

  • 1 tablespoon olive oil or butter
  • 1 capsicum
  • 4 eggs
  • salt and pepper, to serve

  1. Slice the top and bottom off the capsicum, remove all seeds then slice the middle in to four rings, about 1 cm per ring.
  2. In a large saucepan with a lid, heat oil or butter over medium high. Place the capsicum rings into the oil and fry for about a minute per side.
  3. Crack the eggs into the centre of the capsicum rings then cover and allow to cook until they have reached your desired doneness, about 5 minutes. Remove from heat and serve immediately.
