In a saucepan, mix together the sugar and cream until combined. Cover then slowly bring to a boil.
Stir in the sweetened condensed milk, butter, salt and golden syrup. Bring back to a boil and let boil until it reaches soft ball stage (where a drop of hot fudge forms a soft ball in a glass of cold water), about 30 minutes.
Pour into a large bowl and allow to cool for a few minutes. Beat with a whisk or electric mixer until it begins to thicken. Pour into a lined baking tin.
Allow to cool until set then slice into small squares.
