Creamy Russian Fudge

    Russian fudge has sugar, extra light cream, sweetened condensed milk, butter, salt and a bit of golden syrup to create a rich and creamy caramel tasting fudge.

    Makes: 30 pieces

    • 3 cups (660g) sugar
    • 3/4 cup (190ml) extra light cream
    • 1/2 cup (125ml) sweetened condensed milk
    • 120g butter
    • 1/8 teaspoon salt
    • 1 heaping tablespoon golden syrup

    1. In a saucepan, mix together the sugar and cream until combined. Cover then slowly bring to a boil.
    2. Stir in the sweetened condensed milk, butter, salt and golden syrup. Bring back to a boil and let boil until it reaches soft ball stage (where a drop of hot fudge forms a soft ball in a glass of cold water), about 30 minutes.
    3. Pour into a large bowl and allow to cool for a few minutes. Beat with a whisk or electric mixer until it begins to thicken. Pour into a lined baking tin.
    4. Allow to cool until set then slice into small squares.
