Toasted Nut Muesli - Gluten Free!

    A delicious toasted nut muesli to start the morning with something light and delicious!

    Makes: 1 kg muesli

    • 3/4 cup pepitas
    • 1/2 cup sunflower seeds
    • 500g almonds
    • 1 cup coconut (desiccated)
    • 1/2 cup sesame seeds
    • cinnamon (to taste)

    1. Toast pepitas and sunflower seeds. This can be done over a low heat in a fry pan with a little oil or in an oven. Just watch them so they don't burn. Once toasted, put aside to cool.
    2. Roast almonds in the same way. (Alternatively, you can buy them roasted.) If you roast the almonds yourself, once they are done, put them aside to cool.
    3. Toast coconut and sesame seeds together as above. Be careful not to burn them. Put aside to cool, but ensure they are separate from the other ingredients.
    4. In a blender, chop/blend almonds. Be careful not to over-chop/blend the nuts - their size should be a bit bigger than grains of sand. Put in a large mixing bowl. Then, put the pepitas and sunflower seeds in the blender and repeat. Put these in the mixing bowl with the almonds.
    5. Add the toasted coconut and sesame seeds to the mixing bowl. Add cinnamon to taste. Gently, mix well.


    Serving suggestions: - Serve with mixed berry puree, or another fruit puree. - Serve with fresh fruit. - Serve with yoghurt. - Serve with honey. Variations: - Add nutmeg to add some more spice flavours. - Add or substitute nuts as per your taste.
