    This compote requires no cooking, preserving full fruit flavour. Us decorating meringues or pavlovas, sponge cakes or eat with yoghurt.

    Ingredients
    Serves: 5 

    • 375g strawberries, hulled and quartered
    • 350g blueberries
    • 300g blackberries
    • 300g raspberries
    • 125g currants
    • 1 tablespoon caster sugar
    • 3 tablespoons finely chopped fennel greens

    Directions
    Preparation:10min  ›  Ready in:10min 

    1. In a large bowl combine strawberries, blueberries, blackberries, raspberries and currants. Sprinkle with sugar and gently stir in fennel. Refrigerate for about 20 minutes. Serve cold.
