Balsamic Rice

    This easy dinner for one has rice, asparagus, onion and garlic. The veggies are sautéed in oil, combined with the rice then drizzled with balsamic vinegar.

    Serves: 1 

    • 1/2 cup rice
    • 4 asparagus spears, chopped
    • 1/2 onion
    • 2 cloves garlic
    • 1 tablespoon olive oil
    • balsamic vinegar, to taste

    1. Cook rice according to packet directions.
    2. In frying pan, cook asparagus, onion and garlic in oil until onion is translucent.
    3. Mix with rice and drizzle with balsamic vinegar to taste.
