This easy dinner for one has rice, asparagus, onion and garlic. The veggies are sautéed in oil, combined with the rice then drizzled with balsamic vinegar.
1/2 cup rice
4 asparagus spears, chopped
2 cloves garlic
1 tablespoon olive oil
balsamic vinegar, to taste
- Cook rice according to packet directions.
- In frying pan, cook asparagus, onion and garlic in oil until onion is translucent.
- Mix with rice and drizzle with balsamic vinegar to taste.
