Beat eggs until they thicken. Add castor sugar gradually and keep beating until thick as can be. Sift the dry ingredients three times then put in the egg mix all at once and fold through gently with a wooden spoon.
Pre-heat the oven to 200C. Put the mix onto trays lined with baking paper. Use a small teaspoon, leave spreading room and bake for approx 10 mins.
Have cream whipped and kept refrigerated for at least 3 hours before making "sandwiches" of puffs.
