A recipe handed down that has always been a big hit. Serve filled with whipped cream in the middle and icing sugar sprinkled over the top. Yum, can't go wrong.


Makes: 12 puffs

  • 3 eggs
  • 3/4 cup castor sugar
  • 1/2 cup plain flour
  • 1/2 cup cornflour
  • 2 level teaspoons baking powder

  1. Beat eggs until they thicken. Add castor sugar gradually and keep beating until thick as can be. Sift the dry ingredients three times then put in the egg mix all at once and fold through gently with a wooden spoon.
  2. Pre-heat the oven to 200C. Put the mix onto trays lined with baking paper. Use a small teaspoon, leave spreading room and bake for approx 10 mins.
  3. Have cream whipped and kept refrigerated for at least 3 hours before making "sandwiches" of puffs.
  4. Dredge icing sugar on top just before serving.


You won't be able to stop at one.
