Rich chocolate cake with dark chocolate, cocoa powder, vanilla, cream and loads of butter for a decadent, moist and creamy cake, topped with sinful chocolate icing.
Preheat oven to 180 degrees C.
Grease and flour two round cake tins. In a heatproof bowl over a saucepan of simmering water, melt together the chocolate and cream.
Cream together the butter and sugar. Beat in eggs, one at a time. In a different bowl, sift together flour, cocoa powder and bicarb soda. Slowly sift into the wet egg mixture.
Pour into greased tins and bake until a toothpick inserted into the centre comes out clean, about 25 minutes. Allow to cool on a cooling rack before icing.
Icing
Cream together the butter, cream and vanilla until soft. Beat in the icing sugar and the cocoa then continue beating until fluffy. Spread between two cakes and over the top.
