New Zealand Scrambled Eggs

    Scrambled eggs topped with Parmesan cheese paired with sliced portobello mushroom and onion fried in olive oil. This delicious breakfast goes great with toast.

    • 1 portobello mushroom, sliced
    • 1 small onion, sliced
    • 1 tablespoon olive oil
    • 2 eggs
    • Parmesan cheese, to taste

    1. In a frying pan, sauté mushroom and onion in the oil until transparent. Remove from frying pan. Crack the eggs into the frying pan and scramble until cooked. Garnish with Parmesan cheese.
