This cheese cake is baked with fresh strawberries on a buttery base of digestives and brown sugar then topped with a cream cheese, sugar and egg mixture.


Serves: 8 

  • 180g digestive biscuits, crushed
  • 40g brown sugar
  • 80g butter, melted
  • 180g strawberries
  • 450g cream cheese
  • 150g caster sugar
  • 1 teaspoon vanilla essence
  • 4 eggs, beaten

Preparation:30min  ›  Cook:40min  ›  Extra time:15min cooling  ›  Ready in:1hour25min 

  1. Preheat oven to 180 degrees C. In bowl mix together the digestive biscuits, brown sugar and butter. Press into the bottom of a pie tin. Lay in the strawberries and refrigerate.
  2. Beat cream cheese, sugar, vanilla and eggs then pour over the base and the berries.
  3. Bake in preheated oven for 40 minutes until set. Allow to cool then serve.

I use this recipe all the time as my basic cheesecake recipe, the only change is that I use 500g cream cheese, and I change strawberries for another fruit, or a chocolate bar. So far I've made raspberry; lime; cherry ripe; and snickers. Works every time. - 01 Jun 2013
