Kiwi's Ginger Crunch

    Ginger crunch is amazing. It is a New Zealand favourite, with crunchy slice bottom topped with a sweet and spicy ginger icing that's made of butter and golden syrup.

    Makes: 12 slices

    • Crunch
    • 130g butter
    • 1/2 cup (110g) caster sugar
    • 1 1/2 cups (190g) flour
    • 1 teaspoon ground ginger
    • 1 teaspoon baking powder
    • Topping
    • 80g butter
    • 1/2 cup (80g) icing sugar
    • 1 1/2 tablespoons golden syrup
    • 2 tablespoons ground ginger

    Preparation:5min  ›  Cook:25min  ›  Extra time:30min cooling  ›  Ready in:1hour 

    1. Preheat oven to 190 degrees C. Grease a cake tin.
    2. In a large bowl, cream together the butter and sugar then stir in the remainder of the dry crunch ingredients. Press into greased cake tin and bake for 20-25 minutes.
    3. In a saucepan, combine all topping ingredients until melted. Pour over the baked mixture then cut into squares. Leave to set before serving.

    Great recipe, it tastes amazing. I was a little confused with the end of the recipe though... I couldn't decide if I should put the icing on while the slice was still hot or wait for it to cool. I also wasn't sure if I should turn the slice out onto a rack or cool it in the pan. Mine turned out to be a little soft on the inside, so I think next time I will get it out of the tin before I cool it. Thanks for the recipe!  -  27 Jul 2017
