Rice Stuffed Tomatoes

    A great vegetarian/vegan recipe for stuffed tomatoes. You can also use smaller tomatoes and reduce the cooking time.

    Serves: 4 

    • 1/2 cup (90g) white rice
    • 4 large firm tomatoes
    • 1 green capsicum, chopped
    • 1 onion, peeled and finely chopped
    • small handful finely minced fresh parsley
    • 1/2 teaspoon salt
    • 1 clove garlic, finely chopped
    • 1 teaspoon olive oil

    1. Preheat oven to 200 degrees C.
    2. In a small saucepan over high heat, bring water to the boil. Stir in rice, cover and remove from heat. Let stand covered 5 minutes or until water is absorbed. Fluff with fork.
    3. Slice off the top of each tomato and scoop out the pulp, leaving a shell. Reserve 3 tablespoons of pulp and invert the tomatoes to drain.
    4. Chop tomato pulp and put in a medium bowl. Combine with rice, green capsicum, onion, parsley, salt, garlic and olive oil; mix well. Spoon filling into tomato shells.
    5. Bake in preheated oven for 20 to 25 minutes.


    Though great on its own, this is a great base recipe for stuffed tomatoes that can be altered to your taste - try adding Parmesan or Feta cheese, chopped asparagus instead of green pepper, or a mixture of fresh herbs.

    Used different ingredients. I found this to be a great way to use tomatoes. We love stuffed capsicums, but I never thought to stuff tomatoes and bake them. I did have to make extra rice (maybe my tomatoes were too big?) and I added basil. Overall, a very good recipe that I'll make again! Thanks Krista  -  29 Sep 2008


    Excellent vegetarian main if served with a green salad and crusty loaf. My husband described it as "restaurant quality". If you like it spicy, try using nasi goreng rice and adding a minced green chilli. I didn't have parsley, so I substituted mixed herbs. Will definitely be making this one again.  -  01 Nov 2014


    Used different ingredients. This was pretty good. My mum and sister loved these. I changed a bit of the ingredients around since I didn't have all the ingredients you listed. I mixed normal white rice, butter, ground pepper, salt, pieces of pepperoni, onions, garlic, and feta cheese and stuffed them into the tomatoes. Very tasty.  -  29 Sep 2008
