Sun Dried Tomato and Feta Frittata

    This delicious frittata is loaded with egg, Parmeasn, parsley, sun dried tomatoes, fresh tomatoes, spinach and feta cheese then cooked in a frying pan until firm.

    Serves: 6 

    • 8 large eggs
    • 100ml water
    • 4 tablespoons Parmesan cheese
    • 1 tablespoon parsley, chopped
    • salt and pepper, to taste
    • 1/4 cup sun dried tomatoes
    • 1/4 cup tomatoes, diced
    • 1/2 baby spinach
    • 1/2 cup feta cheese, crumbled
    • 80g butter

    1. In a large bowl lightly beat together eggs, Parmesan, parsley, salt, pepper and water. Stir in sun dried tomatoes, fresh tomatoes, spinach and feta cheese.
    2. In a large frying pan over medium heat, melt the butter. Pour in the egg mixture, cover and allow to cook for about 20 minutes or until egg is set.
    3. Flip out on to a large plate, allow to cool then cut to serve.

    The best Frittata I have ever tasted, Good quality and loved by both of us, I had to hlave it as only 2 of us but still had plenty. Had it with a fetta and olive salad . Yum very tasty indeed .Thanks for sharing  -  01 Aug 2012
