This simple side is just sliced eggplant marinaded in miso paste then grilled in the oven. Also tastes great in a burger bun as a vegetable burger.


Serves: 4 

  • 2 packets miso paste
  • 1 cup water
  • 1 eggplant, sliced

Preparation:5min  ›  Cook:45min  ›  Extra time:1min marinating  ›  Ready in:51min 

  1. Mix miso with water then marinate eggplant in that for at least an hour.
  2. Heat oven to 180 degrees C. Cook eggplant for 45 minutes, until brown.
