    This chilli con carne has red onion, garlic, a red chilli, capsicum, tomatoes, beef and kidney beans all simmered to a spicy perfection. Best served over rice.

    Ingredients
    Serves: 4 

    • 1 red onion, diced
    • 1 clove garlic, diced
    • 1 red chilli, seeded and chopped
    • 1 red capsicum, diced
    • 400g stewed tomatoes
    • 500g minced beef
    • 400g red kidney beans, soaked and drained

    Directions
    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. In a large frying pan saute the oninon, garlic and chilli for 2-3 minutes. Stir in the mince and brown. Stir in the beans and tomatoes. Cover and cook for 20-25 minutes, stirring occasionally. Serve over rice.
