This chilli con carne has red onion, garlic, a red chilli, capsicum, tomatoes, beef and kidney beans all simmered to a spicy perfection. Best served over rice.
In a large frying pan saute the oninon, garlic and chilli for 2-3 minutes. Stir in the mince and brown. Stir in the beans and tomatoes. Cover and cook for 20-25 minutes, stirring occasionally. Serve over rice.
