This saffron couscous is mixed with brown onion, red onion, garlic, butter, saffron, spinach, lemon juice and the zest of a lemon for a delicious side or main.


Serves: 4 

  • 250g English spinach, washed and chopped
  • 1 brown onion, diced
  • 1/4 red onion, diced
  • 1 clove garlic, crushed
  • 1 tablespoon butter
  • 2 cups couscous
  • 1 pinch of saffron threads
  • 2 cups chicken stock
  • 1 lemon, juiced and zested

  1. In a frying pan, wilt the spinach then set aside.
  2. Sauté the garlic and onion in the butter. Stir in the saffron and the stock then bring to a boil. Remove from heat, stir in the couscous then cover. Allow to sit for 5 minutes.
  3. Fluff couscous with a fork then stir in the wilted spinach, lemon zest then squeeze lemon juice over the top.
