Tomato Soup with Olives

    This healthy tomato soup has ripe tomatoes, onion, garlic and olives. We add bay leaves, sugar, salt and pepper for flavour and simmer until smooth and tasty.

    Serves: 4 

    • 2kg ripe tomatoes, seeded and diced.
    • 100ml olive oil
    • 2 cloves garlic
    • 1 small onion, diced
    • 1 bay leaf
    • 1 1/2 tablespoons sugar
    • 200ml warm water
    • salt and pepper, to taste
    • 1/2 cup olives

    1. Over medium low heat, heat garlic and onion in olive oil for 5 minutes. Stir in tomatoes, onion, bay, sugar and water. Bring to a boil then simmer over low until soup is reduced by half.
    2. Strain soup through a sive and throw away the remaining skin. Reheat strained soup with the olives then season with salt and pepper.
