Rice is a staple food for a lot of families. By adding few ingredients to the rice, will give that kick. The secret with this recipe is FRESH ingredients. You can't substitute the ingredients with dried ones.
Bring water to a boil in a medium saucepan, add in rice and allow to simmer until rice is cooked, about 20 minutes.
In a saute pan, heat up 1 tablespoon vegetable oil, add chopped onion, garlic and cook until translucent. Transfer rice and chopped onion/garlic to a bowl, and toss with mint, lemon juice, parsley, salt, and the remaining oil. Serve at room temperature.
