Melting Moments with a Twist

    These creamy melting moments are a shortbread biscuit with a creamy custard filling that can be made and enjoyed plain or changed to suit your culinary preference.

    Makes: 12 biscuits

    • Biscuit
    • 125g butter
    • 2 1/2 tablespoons icing sugar
    • 1/2 teaspoon vanilla essence
    • 150g flour
    • 60g cornflour
    • Filling
    • 60g butter
    • 150g icing sugar
    • 1/4 teaspoon vanilla essence

    1. Preheat oven to 160 degrees C.
    2. Whip butter and sugar until light and fluffy then stir in vanilla. Combine flour and cornflour in a septate bowl then combine with the other ingredients.
    3. Roll batter into little balls, about 3 teaspoons per ball. Place on a baking tray, gently press tops with a fork then bake in preheated oven until slightly golden. Allow to cool on a cooling rack.
    4. Filling

    5. Mix butter, sugar and vanilla then beat until creamy. Smooth filling on the bottom of one biscuit then top with another.

    Filling Flavour Twits

    Strawberry: Replace the filling with strawberry jam.

    Raspberry: Replace the filling with raspberry jam.

    Passionfruit: Add 2 tablespoons of passion fruit pulp to the filling and mix well.

    Pistachio: Add 1 tablespoon ground pistachio to the filling and mix.

    Lemon: Add 1 1/2 tablespoons of lemon juice to the filling.

    Orange: Add 2 tablespoons orange juice to the filling.

    Mint: Replace the vanilla essence in the filling with mint essence.

    Mango: Add 2 tablespoons mango pulp to the filling.
