Raspberry Cupcakes

    A basic raspberry cupcake recipe which is a great option when raspberries are in season, especially if you pick your own!

    Makes: 18 cupcakes

    • 200g butter, softened
    • 200g caster sugar
    • 1 teaspoon vanilla essence
    • 2 tablespoons milk
    • 300g self raising flour
    • 1/2 cup fresh raspberries

    1. Heat oven to 180 degrees C. Grease or line a muffin tin.
    2. Mix together butter, sugar, vanilla and milk. Stir in flour then beat until smooth. Fold in the fresh raspberries.
    3. Spoon into the muffin cups then bake in preheated oven until a toothpick inserted into the centre comes out clean, about 20 minutes. Allow to cool on a rack before icing.
