Aztec Chocolate Cupcakes

    This chocolate cupcake recipe has cocoa and chilli to make delicious and spicy cupcakes. Combine these cupcakes with your favourite icing then top with a red chilli.

    Makes: 18 cupcakes

    • 200g butter, softened
    • 200g caster sugar
    • 2 teaspoons vanilla essence
    • 3 tablespoons milk
    • 2 tablespoons cocoa powder
    • 1/2 tablespoon chilli powder
    • 300g self raising flour

    1. Heat oven to 180 degrees C. Grease or line a muffin tin.
    2. Mix together butter, sugar vanilla, milk, cocoa powder and chilli. Stir in flour then beat until smooth.
    3. Spoon mixture into prepared muffin cups then bake in preheated oven until a toothpick inserted into the centre comes out clean, about 20 minutes. Allow to cool on a cooling rack before icing.

    Mint Chocolate Substitution

    For mint chocolate cupcakes remove chilli powder and substitute vanilla for mint essence.
