Basic Lemon Cupcakes

    This basic lemon cupcake recipe has lemon zest and lemon juice to make delicious and moist cupcakes. Combine these cupcakes with your favourite icing.

    Makes: 18 cupcakes

    • 200g butter, softened
    • 200g castor sugar
    • 2 teaspoons vanilla essence
    • 2 tablespoons lemon juice
    • zest of two small lemons
    • 300g self raising flour

    Preparation:15min  ›  Cook:20min  ›  Extra time:30min cooling  ›  Ready in:1hour5min 

    1. Heat oven to 180 degrees C. Grease or line a cupcake tray.
    2. Mix together butter, sugar, vanilla, lemon juice and zest. Stir in flour then beat until smooth.
    3. Spoon mixture into prepared cupcake tray then bake in preheated oven until a toothpick inserted into the centre comes out clean, about 20 minutes. Allow to cool on a cooling rack before icing.

    I got to the part where you put the flour in  -  28 Jul 2012


    Tasty enough, but this recipe is totally wrong. Firstly. it doesn't even come close to making 18. Secondly, the wet-dry ratio is completely off. I had to change it significantly to get a decent result.  -  02 May 2015
