This basic cupcake recipe is simple with only 6 ingredients and lots of room for your own creativity. Try my tasty flavour combinations or invent your own.
Makes: 18 cupcakes
200g butter, softened
200g caster sugar
2 teaspoons vanilla essence
2 tablespoons milk
300g self raising flour
fruit - see footnotes

- Heat oven to 180 degrees C. Grease or line a muffin tin.
- Mix together butter, sugar vanilla and milk. Stir in flour then beat until smooth.
- Spoon mixture into prepared muffin cups then bake in preheated oven until a toothpick inserted into the centre comes out clean, about 20 minutes. Allow to cool on a cooling rack before icing.
Orange Cupcakes: Add zest of two small oranges and substitute milk for orange juice.
Lemon Cupcakes: Add zest of two lemons then substitute milk for 1 tablespoon lemon juice.
Raspberry Cupcakes: Add 1 only teaspoon vanilla, and mix in 1/2 cup fresh raspberries.
Strawberry Cupcakes: Add in only1 teaspoon vanilla, and in 1/2 cup of chopped fresh strawberries.
