Roast Veggie Tacos

    These easy roasted vegetable tacos have tomatoes, onion, asparagus and black beans stuffed into warmed taco shells. This is a quick and tasty midweek meal.

    Serves: 8 

    • 2 tablespoons olive oil
    • 5 tomatoes, sliced
    • 1 onion, sliced
    • 15 asparagus
    • 1 cup black beans
    • 2 avocados
    • 6 taco shells or tortillas
    • salt and pepper, to taste

    1. Preheat oven to 200 degrees C.
    2. Mix the onion, tomato, asparagus and olive oil on an aluminium lined baking tray. Sprinkle with salt and pepper. Roast in preheated oven until veggies are soft, about 10 minutes. Microwave the beans until hot.
    3. Warm taco shells in the oven for 5-10 minutes then stuff shells with veggies, avocado and black beans.

    Black Beans

    Black beans are not that common but can be found in tins in the organic department in your supermarket, at a health food shop or dry at places like Bin Inn. (Dry beans must be soaked overnight in water.)
