This salad has a bit of everything. Fried onion, mushroom, garlic and sausages, baby spinach, stuffed olives, tomatoes and diced feta. All topped with a fried egg.
Fry onion, mushroom and garlic until brown. Stir in the sausages then fry until fully cooked then set aside in a bowl. In the frying pan, fry the eggs.
In a salad bowl, combine spinach, olives, cherry tomatoes and feta. Serve with the sausage mixture then top with the eggs.
Dressing
If you like, you can make a dressing out to lemon juice, olive oil and herbs.
