    This salad has a bit of everything. Fried onion, mushroom, garlic and sausages, baby spinach, stuffed olives, tomatoes and diced feta. All topped with a fried egg.

    Ingredients
    Serves: 2 

    • 1/2 onion, sliced
    • 1/2 cup mushrooms, sliced
    • 3 cloves garlic, chopped
    • 2 sausages
    • 2 eggs
    • 1 cup baby spinach
    • 15 stuffed olives
    • 1/2 cup cherry tomatoes, halved
    • 1/4 cup feta, diced

    1. Fry onion, mushroom and garlic until brown. Stir in the sausages then fry until fully cooked then set aside in a bowl. In the frying pan, fry the eggs.
    2. In a salad bowl, combine spinach, olives, cherry tomatoes and feta. Serve with the sausage mixture then top with the eggs.

    Dressing

    If you like, you can make a dressing out to lemon juice, olive oil and herbs.
