Veggie Fajitas

    These quick and easy veggie fajitas are a great midweek meal. Just sauté up an onion, some mushroom and some capsicum in a bit of white wine then serve on a tortilla.

    Ingredients
    Makes: 8 fajitas

    • 8 tortillas
    • 1 onion, sliced
    • 1/2 cup mushrooms, sliced
    • 1 cup capsicum, sliced
    • 1 tablespoon white wine, to taste
    • 1 avocado, sliced
    • 1/4 lettuce, diced

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Stir fry the onion, mushroom and capsicum in the white wine until softened but not mushy.
    2. On each tortilla divide the sautéed veggies, avocado and lettuce. Fold in half then eat.
