    Here's an easy, healthy recipe you can get the kids to help with. I often find they're already snacking on the ingredients before they've even got into the blender, so make sure you buy that little extra of the ingredients to tie the kids over until they're prepared.

    Ingredients
    Makes: 20 balls

    • 1 tablespoon caster sugar
    • 1 tablespoon boiled water
    • 1 1/2 cups dried apricots
    • 1/4 cup plain flour
    • 1 tablespoon margarine
    • 2 tablespoon desiccated coconut (and extra for rolling)

    Directions
    Preparation:10min  ›  Extra time:30min chilling  ›  Ready in:40min 

    1. Dissolve the sugar in the boiling water in a tea cup.
    2. Place all ingredients in a blender, until well combined and the apricots have been chopped small.
    3. Roll small amounts of mixture in your hands into ball shapes, and then roll in extra coconut.
    4. Place in fridge until chilled.
