Orange and Carrot Cupcakes

    What a favourite of my son's! He seems to know when these are in the oven, and won't leave me alone until they're done, out of the oven and cool enough for him to have one. Personally I prefer them with a little cream cheese frosting on top, but he likes them plain.

    Makes: 12 cupcakes

    • 1 3/4 cups wholemeal flour
    • 125g margarine
    • 1/2 cup soft brown sugar
    • 1 cup raisins
    • 2 eggs, beaten
    • 2 tablespoons honey
    • 1 large carrot, peeled and grated
    • 1 orange, zested and juiced

    1. Preheat the oven to 180 degrees C. Line a cupcake tray with cupcake cases.
    2. Rub the flour and margarine together with your hands until the mixture resembles bread crumbs. Add the brown sugar and raisins and stir through.
    3. Add the eggs and honey; once combined stir through the carrot, orange juice and rind.
    4. Spoon the mixture into cupcake cases and bake for 15 minutes, or a skewer inserted shows they are cooked.
