Chocolatey Fruit Clusters

    A little secret indulgence, that you probably should really share! These have been a favourite at family parties, or serving with coffee in the afternoon after a lazy BBQ.

    Makes: 18 clusters

    • 1/2 cup (60g) flaked almonds
    • 1/2 cup (45g) desiccated coconut
    • 1/2 cup (100g) quartered glace cherries
    • 1 cup (200g) mixed peel
    • 100g dry fried noodles (eg. Changs)
    • 300g milk chocolate
    • 70g copha, chopped

    Preparation:15min  ›  Cook:3min  ›  Extra time:30min chilling  ›  Ready in:48min 

    1. Place almonds, coconut, cherries, peel and noodles in a bowl.
    2. In a separate bowl, break the chocolate apart, and place the copha in also. Melt in microwave in 30 second bursts until melted and combined.
    3. Pour the melted chocolate mixture over the dry ingredients and stir until combined. Spoon into patty cases and allow to set in the fridge.
