Eggless Chocolate Cupcakes

    Cupcakes make us think of parties and entertaining! This is an easy egg-free cupcake recipe that will become a family favourite for all occasions!

    Serves: 12 

    • 1 cup self raising flour
    • 1/2 cup plain flour
    • 1 cup sugar
    • 4 tablespoons cocoa
    • 1/2 teaspoon bicarb soda
    • pinch of salt
    • 65g melted butter
    • 1 cup milk
    • 1/2 teaspoon vanilla essence

    Preparation:15min  ›  Cook:25min  ›  Extra time:20min cooling  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease a cupcake tray or line with cupcake papers.
    2. In a large bowl combine all dry ingredients and mix well. After melting the butter, mix with dry ingredients. Combine milk and vanilla together, then add to dry ingredients.
    3. Spoon the mixture into the prepared cups, dividing evenly. Cook for about 20-25 minutes or until a toothpick inserted in the centre comes out clean. Allow to cool on wire rack.
    4. Once the cupcakes have cooled top with your favourite icing and decorate.

    Fabulous recipe,i had ran out of eggs,needed to make cuppies & tried this recipe;was a bit sceptical,ive never made egg free but wow,moist,soft cuppies,well risen & without a crusty top;defo doing again !  -  29 Dec 2014
