Rice and Refried Beans

    This dish can be eaten as a side or as a meal because beans and rice make a complete protein. This is a mixture of rice, refried beans, lemon juice, garlic and cheese.

    Serves: 4 

    • 1 clove garlic, diced
    • 1 tin refried beans
    • 1 1/2 cup rice
    • 1/2 lemon
    • 1/2 cup cheese, grated

    1. Cook the rice according to packet directions. Put the beans in a saucepan on low then let them heat through, stirring occasionally.
    2. When warm, mix in the garlic and squeeze in the juice from the lemon. Mix with the cooked rice then top with grated cheese.


    This is a great way to use up any leftover rice.
