This quick and easy omelette is fried in butter and olive oil then sprinkled with feta cheese and fresh spinach.

Makes: 1 omelette

  • 2 eggs
  • 1 tablespoon milk
  • 2 tablespoons olive oil
  • 1 teaspoon butter
  • 60g feta cheese
  • 50g fresh spinach
  • salt and pepper, to taste

Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Whisk milk and eggs. Melt butter and oil in a frying pan at medium heat. Add the eggs then let cook until almost set. On one half of the omelette spread the feta and spinach, then fold the other half over it. Add salt and pepper to taste.
