Feta Spinach and Capsicum Muffins

    These delicious savoury muffins have spinach, red capsicum and feta cheese baked into them to make a yummy breakfast or just a savoury snack.

    Makes: 12 muffins

    • 250g plain flour
    • 3 teaspoons baking powder
    • 2 large eggs (beaten)
    • 70ml olive oil
    • 300ml milk
    • black pepper, to taste
    • 100g fresh spinach
    • 100g red capsicum, diced
    • 100g feta cheese, crumbled

    1. Preheat oven to 180 degrees C. Grease or line 12 muffin cups.
    2. Mix together flour and baking powder. In a separate bowl, mix eggs, olive oil and milk. Mix the egg mixture into the flour mixture then fold in spinach, capsicum and feta.
    3. Spoon into muffin cups then sprinkle the tops with black pepper. Bake in preheated oven for 20 minutes or until a toothpick inserted in the centre comes out clean.
