Vegetable Pad Thai

    This quick and easy vegetable pad Thai has capsicum, red onion, snow peas and pad Thai paste over rice noodles. Makes an easy dinner for any occasion.

    Serves: 2 

    • 1 tablespoon olive oil
    • 1/2 capsicum, diced
    • 1/2 red onion, diced
    • 1 handful snow peas
    • 2 tablespoons pad Thai paste
    • 2 cups rice noodles

    1. In a large frying pan, add veggies with olive oil then cook them on low until they are soft. In a saucepan, boil water then add rice noodles. Cook until soft, about 5 minutes.
    2. Drain noodles then stir in the pad Thai paste until well mixed. Stir in the veggies then serve.
