A quick and easy pasta dish that can be made with almost any veggie but we use capsicum, snow peas, broccoli, red onion and garlic. Topped with parmesan cheese.

Serves: 4 

  • 1/2 capsicum
  • 1 handful of snow peas
  • 1/2 head broccoli, diced
  • 1/2 cup red onion, diced
  • 1 tablespoon garlic, diced
  • 2 cups pasta
  • 2 tablespoons Parmesan cheese, grated

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. In a frying pan, mix the diced veggies then drizzle with olive oil and cook them until they are soft and lightly brown. Stir occasionally to keep them from burning.
  2. In a saucepan cook the pasta according to packet directions then drain. Mix with the veggies then top with Parmesan cheese.
