Rainbow Trout Parcels

    These trout parcels are an impressive presentation and you can eat them right out of the foil if you don't want washing up!

    Serves: 2 

    • 2 rainbow trout fillets
    • 1 tablespoon olive oil
    • 1 teaspoon freshly ground black pepper
    • 2 cloves garlic, sliced
    • 1 fresh green chilli, sliced
    • 1 large lemon, sliced

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 200 degrees C. Rinse fish and pat dry.
    2. Rub fillets with olive oil and season with black pepper. Place each fillet on a large sheet of aluminium foil. Top with garlic and chilli slices.
    3. Squeeze the juice from the ends of the lemon over the fish. Arrange lemon slices on top of fillets.
    4. Carefully seal all edges of the foil to form enclosed parcels. Place parcels on baking tray.
    5. Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

    Something else. My gran has been making this recipe for our family for over fifty years, and it has never been a miss no matter what type of fish you use. She uses green capsicum (and sometimes red too if she has it) instead of a chilli. She also throws in about a half teaspoon of dill (really important!) No need for fresh lemon (especially if that makes it too lemony for you) just a tablespoon of lemon juice will do. In our family, nothing is more important than fish. Believe me, if you only knew!
