This quick and easy scramble takes all of 5 minutes to make. Has baby spinach, broccoli, eggs, feta cheese, cherry tomatoes, onion and a pinch of chilli powder to taste.

Serves: 1 

  • 2 eggs
  • 1 tablespoon butter
  • 1/8 cup broccoli
  • tablespoon onion
  • 2 cherry tomatoes
  • handful of spinach
  • 2 tablespoons feta, crumbled
  • 1 tablespoon milk
  • salt and pepper, to taste

Preparation:1min  ›  Cook:4min  ›  Ready in:5min 

  1. In a frying pan, heat the butter on high. Break up the broccoli into small bits into the frying pan. Dice and add the onion. Dice and add the tomatoes. Toss in a handful of spinach then sauté until wilted.
  2. Break the eggs into the frypan then pour in the splash of milk. Sprinkle on some chilli powder then scramble the eggs with the veggies until eggs are cooked.
  3. Remove from heat and crumble on the feta cheese then add salt and pepper to taste. Enjoy alone or with toast.


I just made this out of stuff that was in the fridge. Use what ever you have. If your not keen on something, leave it out.
