Simple Chocolate Fudge Cake

    This chocolate fudge cake is easy to prepare. It has white sugar, butter, eggs, bicarb soda, flour, cocoa powder vanilla and water and can be split with jam and cream.

    Serves: 8 

    • 1 cup (220g) white sugar
    • 125g butter, melted
    • 2 eggs
    • 1/2 teaspoons bicarb soda
    • 1/2 cup (125ml) milk
    • 1 1/2 cups (190g) self raising flour
    • 2 tablespoons cocoa powder
    • 1/2 teaspoon vanilla
    • 1/2 cup (125ml) of boiling water

    1. Preheat oven to 190 degrees C. Whisk together the bicarb soda and the milk. Beat together with sugar, butter and eggs. Add flour, cocoa and the vanilla mixed with the boiling water.
    2. Pour into a greased 20cm cake tin then bake in preheated oven for 45 minutes or until a toothpick inserted in the centre comes out clean. Allow to cool.
    3. Split with jam and whipped cream then ice with chocolate icing.

    Such a simple, throw together cake that actually comes out fudgy (though better the next day). I just added some instant coffee in with the boiling water as I love the extra richness it gives.  -  26 May 2013
