Chewy Chocolate Weet-Bix Slice

    This chewy chocolate Weet-Bix slice has brown sugar, butter, egg, vanilla, cocoa powder, flour, coconut and crushed Weet-Bix, topped with creamy chocolate topping.

    • Slice
    • 1 cup (155g) brown sugar
    • 130g unsalted butter, melted
    • 1 egg, lightly beaten
    • 1 teaspoon vanilla essence
    • 2 tablespoons cocoa power
    • 1 cup (125g) self raising flour
    • 1/2 cup (45g) shredded coconut
    • 1 cup crushed Weet-Bix(TM)
    • Topping
    • 250g cooking chocolate
    • 2 tablespoons cream

    1. Preheat oven to 180 degrees C. Line a 20cm square slice tin. Combine slice ingredients in a bowl. Press into the prepared tin then bake for 20 minutes.
    2. Melt chocolate and cream in a bowl over a saucepan of simmering water. Pour over warm base then allow to cool. Cut into squares then serve.
