    A great veggie lunch that goes well with soup or salad that you can make with leftover veggies. Has eggplant, zucchini, mozzarella cheese and pesto in toasted bread.

    Serves: 1 

    • 2 slices eggplant
    • 2 slices zucchini
    • 2 slices mozzarella cheese
    • 1 tablespoon pesto
    • 2 slices bread

    Directions

    1. In a griller, grill the zucchini and eggplant to your desired doneness, about 5-10 minutes.
    2. Toast the bread. Spread the pesto over the insides of the bread. In the middle add the veggies and cheese.
