Easy Gluten Free Chocolate Chip Biscuits

    To make these gluten free chocolate chip biscuits you will need gluten free flour, baking powder and xantham gum, available in health food shops.

    Makes: 25 biscuits

    • 110g unsalted butter
    • 130g caster sugar
    • 60g soft brown sugar
    • 1 teaspoon vanilla extract
    • 1 egg, beaten
    • 110g gluten-free plain flour
    • 1/2 teaspoon gluten-free baking powder
    • 1/2 teaspoon salt
    • 225g dark chocolate chips
    • 150g walnuts, chopped
    • xantham gum used as per instructions on tin (if using GF flour)

    1. Preheat oven to 160 degree C. Line a baking tray with baking paper and set aside.
    2. Cream together the butter, caster sugar, brown sugar and vanilla extract until light and fluffy. Beat in the egg.
    3. Sift the flour with the baking powder, xantham gum and salt into the creamed mixture followed by the chocolate and walnuts. Cover and chill in the fridge for 1 hour.
    4. Roll mixture into small balls about the size of a walnut. Place balls on a baking tray spaced about 4cm apart and bake for about 12 minutes. Cool on a wire rack before storing in an airtight container.

    I have made these delicious cookies twice now, omitted the xantham gum because I didn't have any, so doubled the amount of gluten-free flour, which worked pretty well to hold things together.
