Sweet Potato and Danish Feta Cannelloni

    I am sick of always having spinach and ricotta cannelloni so I made this one up myself and it has been a hit to all my friends and family since . if you cant find any Danish feta then just use normal but i think Danish is alot nicer

    Makes: 1 big bake dish so enough for 6-8 servings

    • 1-2 blocks Danish feta
    • 1 medium-large Sweet Potato
    • 1 pack Cannelloni pasta tubes
    • 2 tins diced tomatoes or 1 jar of tomato pasta sauce
    • 2 cloves garlic
    • 1 teaspoon rosemary,basil or Italian herbs
    • half a block tasty Cheese or depends how much you like for on top

    1. Start by peeling your sweet potato and chop into small pieces so they cook quickly Then put in a medium-large sauce pan
    2. put sweet potato in a medium-large sauce pan fill water so it overs the sweet potato and boil for approx 20mins or until u can put a fork in it easily
    3. take off stove and mash it up, then start breaking your Danish feta into a large bowl and add your sweet potato then mash them together
    4. preheat your oven now to 180°C fan forced that is. get a medium-large casserole dish and put it next to your mixture
    5. Get a piping bag or if you dont mind getting messy use your fingers, get your cannelloni tubes and start stuffing that mixture into every single one,putting each one into your casserole dish as you go if some are broken you can still use them just paste the mixture on them and put them in any gaps down the side of dish
    6. crush your garlic and put it into your tinned tomatoes and same with the herbs then pour it all over your cannelloni make sure you cover it all. then grate cheese and put all over the top until satisfied then pop in oven and cook for 30-45 minutes until skewers goes through the pasta nicely
    7. serve and enjoy.. then come back here and write a review :D

    Use for leftovers

    I pack into containers and freeze for later. still tastes great
