Mix together the tomatoes and coriander. Cover and refrigerate.
In a small bowl mix together the garlic, ginger, soy, fish sauce and honey. Set aside.
Heat the oil in a wok and add chicken. While stiring, add the sauce mixture and fry for 5 minutes or until chicken is cooked through. Roughly chop the chicken and spoon into lettuce leaves. Sprinkle with diced tomato. Drizzle with an asian dipping sauce, if desired. Serve
