Easy Lettuce Wraps

    This is a simple way to get lettuce into my kids and they love being able to eat with their fingers. You can try an asian dipping sauce to put on top if you like.

    Makes: 8 wraps

    • 2 teaspoons minced garlic
    • 1 teaspoon minced ginger
    • 1 tablespoon olive oil
    • 1 tablespoon soy sauce
    • 1 teaspoon fish sauce
    • 1 tablespoon honey
    • 500g chicken, thinly sliced
    • 2 large tomatoes, diced
    • 2 tablespoons chopped coriander
    • 8 lettuce leaves, washed

    1. Mix together the tomatoes and coriander. Cover and refrigerate.
    2. In a small bowl mix together the garlic, ginger, soy, fish sauce and honey. Set aside.
    3. Heat the oil in a wok and add chicken. While stiring, add the sauce mixture and fry for 5 minutes or until chicken is cooked through. Roughly chop the chicken and spoon into lettuce leaves. Sprinkle with diced tomato. Drizzle with an asian dipping sauce, if desired. Serve
