Split Pea Curry Puffs

    These delicious curry puffs are made with puff pastry, green split peas and curry powder. Serve them as an appetiser or a main with spicy relish.

    Makes: 8 

    • 200g green split peas, washed
    • 1 onion, chopped finely
    • 4 cloves garlic, chopped finely
    • 4 tablespoons sultanas
    • 2 tablespoons curry powder
    • salt to taste
    • 2 sheets puff pastry, thawed

    1. In a large pot, simmer the split peas until cooked, about 40 minutes.
    2. Preheat the oven to 220 degrees C.
    3. Meanwhile, in a small saucepan, saute the onion and garlic until the onion is soft. Add the sultanas and curry powder.
    4. Add the onion mixture to the split peas and mix well. Salt to taste.
    5. Cut each puff pastry sheet into 4 squares.
    6. On each square, place a tablespoon of the split pea mixture in the centre of the square and fold over diagonally to make a triangle. Close the edges together.
    7. Place the split pea triangles on a greased tray and bake in the preheated oven for about 20 minutes or until golden brown.
