Gluten Free Strawberry and Banana Bread

    Serves: 24 

    • 3 cups gluten free plain flour
    • 1 teaspoon bi-carb soda
    • 2 teaspoons ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/2 teaspoon salt
    • 1 cup caster sugar
    • 2 bananas, mashed
    • 6 strawberries, mashed
    • 1 teaspoon orange zest
    • 4 eggs, lightly whisked
    • 1 cup vegetable oil
    • 1 cup chopped walnuts

    1. Preheat oven to 180 degrees C. Grease two 22x12cm loaf tins.
    2. In a medium bowl mix together the flour, bi-carb, cinnamon, nutmeg and salt.
    3. In a bowl combine the sugar, bananas, strawberries, orange zest, eggs and oil. Beat with an electric mixer at medium speed for 2 minutes.
    4. Add the sugar/fruit mixture to the flour mixture then stir until just until moistened. Finally stir in walnuts.
    5. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Remove to a wire rack to cool.

    I used buckwheat and coconut flour.put cut strawberries and used maple syrup instead of sugar and added chopped dates.turned out really nice!  -  06 Feb 2016
