    • 2 large egg whites
    • 150 g Granulated Sugar
    • 1 tsp lemon zest
    • 1 tsp Vanilla extract
    • Salt

    1. Preheat oven to 200 degrees F. Separate the egg whites with its yolk. Beat the egg whites on medium speed until foamy. Add a pinch of salt and increase the speed to medium high.
    2. Slowly sprinkle the sugar, continue to beat eggs until they become thick, glossy and hold stiff peeks. It should look like melted marshmallow
    3. Fold in lemon zest and vanilla extract. Spoon to piping bag, fitted with a large round tip. Pipe round shape onto the baking sheets. Bake for 2 hours until no longer sticky.
    4. Remove from oven and allow to cool completely.
