- 2 large egg whites
- 150 g Granulated Sugar
- 1 tsp lemon zest
- 1 tsp Vanilla extract
- Salt

- Preheat oven to 200 degrees F. Separate the egg whites with its yolk. Beat the egg whites on medium speed until foamy. Add a pinch of salt and increase the speed to medium high.
- Slowly sprinkle the sugar, continue to beat eggs until they become thick, glossy and hold stiff peeks. It should look like melted marshmallow
- Fold in lemon zest and vanilla extract. Spoon to piping bag, fitted with a large round tip. Pipe round shape onto the baking sheets. Bake for 2 hours until no longer sticky.
- Remove from oven and allow to cool completely.
