Sweet Kumara Muffins

Having no pumpkin in the house I decided to use kumara instead. The recipe worked really well and now we have sweet kumara muffins.

Ingredients

- 2 eggs, whisked
- 1 cup caster sugar
- 1 cup cooked kumara, mashed
- 1/2 cupl olive oil
- 1/3 cup water
- 1 1/2 cups self raising flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt

- Preheat the oven to 180 degrees C. Grease a muffin tin or line with paper muffin cases.
- In a large bowl mix eggs, sugar, kumara, oil and water. Combine flour, cinnamon and salt.
- Add the dry ingredients to the wet ingredients then gently fold in until just moistened. Fill muffin cups 3/4 full.
- Bake in the oven for 20 to 25 minutes or until done.
