Sweet Kumara Muffins

    Having no pumpkin in the house I decided to use kumara instead. The recipe worked really well and now we have sweet kumara muffins.

    Serves: 10 

    • 2 eggs, whisked
    • 1 cup caster sugar
    • 1 cup cooked kumara, mashed
    • 1/2 cupl olive oil
    • 1/3 cup water
    • 1 1/2 cups self raising flour
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt

    1. Preheat the oven to 180 degrees C. Grease a muffin tin or line with paper muffin cases.
    2. In a large bowl mix eggs, sugar, kumara, oil and water. Combine flour, cinnamon and salt.
    3. Add the dry ingredients to the wet ingredients then gently fold in until just moistened. Fill muffin cups 3/4 full.
    4. Bake in the oven for 20 to 25 minutes or until done.
