Preheat the oven to 200 degrees C. Grease or line a baking tray with baking paper.
Lay out the pastry on a flat surface. Cut out into 6 equal pieces. Roll out a little, if necessary, to create a piece that is large enough to wrap one sausage. Spread mustard onto each pastry piece and roll around one sausage. Seal and gently press with a fork. Repeat.
Cut the sausage rolls into 1-2cm thick pieces. Place onto prepared tray. Sprinkle with cheese. Bake in preheated oven for 10-15 minutes or until the pastry is puffy and golden. Leave to cool for a little while before serving.
