Chicken, Carrot and Mushroom Stirfry

    An easy stirfry packed with protein. Tastes great served with either white or brown rice or noodles if you prefer.

    • 2 tablespoons olive oil
    • 3 chicken breasts, thinly sliced
    • 400g sliced mushrooms
    • 4 carrots, peeled and cut into long pieces
    • 2/3 cup (165ml) teriyaki sauce

    1. Heat 1 tablespoon oil in a wok. Add chicken and fry until browned. Remove to a bowl and set aside.
    2. Heat 1 tablespoon oil in a wok. Add carrots and cook for 2 minutes. Add mushrooms and cook for 1 minute. Add chicken and teriyaki sauce and stir for 2 minutes.
    3. Serve over rice.
